Menus inspired by the Metropolitan Area Outer Underground Discharge Channel, developed so that visitors can enjoy Kasukabe's food. Currently 18 local restaurants offer a total of 23 dishes.
紫藤乌冬面
Fuji Udon was created by Kasukabe's noodle industry association as a dish worthy of the "home of wisteria." Its wisteria color comes from Ayamurasaki sweet potatoes, which are purple both inside and out. The potato is ground into flour and kneaded with "Ayahikari," a firm Saitama-grown wheat flour. Beautiful to look at and smooth to eat, it is the proud taste of the town where wisteria blooms.

Ankake (thick sauce) yakisoba topped with shiso furikake inspired by Kasukabe's city flower, the wisteria! A refreshing yakisoba that is also popular with women.
